You can dazzle your friends and family with this fancy Summer Salad!

In the summertime, sometimes it is to dang hot in the house to cook on the stove, so grilling out is the way to go. Being on a budget can sometimes limit what you can buy for your BBQ, but with this recipe, you can go with a mix of canned foods and a couple inexpensive fresh produce items. Texas Caviar is a versatile summer salad that will have your friends and family begging for the recipe.

You can enjoy Texas Caviar right in your back yard, on a paper plate, in the sun! No yacht and champagne needed!

Texas Caviar

Ingredients:

2 cans of Black Beans rinsed and drained (Or your favorite bean)

2 cans of Corn, unsalted, rinsed and drained

1 jalapeno chile pepper, seeded and chopped finely

1 red pepper-cored, seeded and finely chopped

1 orange pepper-cored, seeded and finely chopped

1 small red onion, finely chopped

1 bunch of cilantro leaves, finely chopped

1/2 cup of white vinegar

1/2 cup of extra virgin olive oil

1/3 cup of sugar

1/2 teaspoon of garlic powder

Instructions:

  1. Mix the black beans,corn, jalapeno pepper, red and green bell peppers, red onion, and cilantro together in a large bowl.
  2. To make the dressing, stir the rice vinegar, olive oil, sugar, and garlic powder together in a pan. Bring to a boil, then remove from heat, and cool. Pour dressing over bean mixture, and toss to mix evenly.
  3. It is best to make the day before your BBQ to let the salad marinate in the dressing.  Keep the salad in the fridge until time to serve.
