If you've driven through downtown Dover recently, you may have noticed a new restaurant has moved into one of the city's most recognizable dining spaces.

Charro's Mexican Cuisine has officially opened at 47 Washington Street in Dover, taking over the former Fire & Spice location (and a few other places that once called that space home). As someone who is always willing to volunteer for restaurant research, I decided to check it out for myself.

My first impression? Super friendly staff.  Very cool vibe inside and the bar is amazing.  I can definitely see why people are already talking about this place.  By the time I left there was a line out the door.

I started with the chips and salsa, and honestly, that's usually a pretty good indicator of what's coming next. The salsa was fresh, flavorful, and had just enough kick to keep me reaching for another chip.

Then came the drinks.

I ordered the Inferno Margarita, a spicy margarita that absolutely lived up to its name. It had the perfect balance of heat and flavor without being overwhelming. In fact, it was so good I ended up ordering a second one. No regrets.  I want to try the Cucumber margarita next time I go (maybe tonight... lol.)

For my meal, I went with the Birria Tacos, served with rice and beans. The tacos were packed with flavor, tender, and everything you want from a good birria dish. The rice and beans rounded out the meal perfectly, and every bite felt like comfort food with a little extra personality. The beans were served in a tiny tortilla shell.

The portion size was no joke, either.

By the time I finished, I was absolutely stuffed. One of those meals where you sit back in your chair and immediately start wondering if you can somehow justify taking a nap before the rest of your day.

Downtown Dover has become quite the food destination over the last few years, and Charro's feels like a welcome addition to the lineup. Between the flavorful food, the Inferno Margarita, and the generous portions, my first visit was a success.
