Back when I used to go to social gatherings, I would always bring my famous beer dip. Some have called me a one dip wonder. But it's so easy AND a crowd pleaser! If it ain't broke, don't fix it! My beer dip is literally four ingredients, five if you count the pretzels for dipping. It's 1/4 cup beer (preferably an IPA), 4 cups of sharp cheddar cheese, 16 ounces of cream cheese, and one packet of hidden valley ranch dip powder.

The Woodstock Inn Brewery in North Woodstock, New Hampshire, has an AWESOME beer dip on their appetizer menu and it is made with their famous 4000 Footer IPA. It's a little fancier than mine and probably more delicious. They were kind enough to share it on their website so you can make it at home for the big game.

They suggest making it with their 4000 Footer IPA but if you don't have that on hand you can substitute for Moody Brew, Mosaic Papaya Pale Ale or any of their other IPA’s or Pale Ales.

  • 1/2 cup white onion diced
  • 1/4 cup minced garlic
  • One, 8 ounce can roasted red peppers
  • One small bag of spinach
  • 1 lb cream cheese
  • 1/4 cup Gorgonzola cheese
  • 2/3 cup fresh grated parm
  • 1/4 cup Mayo
  • 1/5 ounce Sriracha Sauce
  • Pinch of Kosher salt
  • Pinch of coarse ground Black Pepper

Directions:
1. Sauté to caramelize onions and garlic deglaze with about a 1/2 cup of 4000 Footer IPA
2. Add spinach until wilted
3. Mix with all ingredients and simmer until hot.

(Optional)
Bake in casserole at 375 degrees for approximately 15-20 minutes for with some mozzarella on top until melted and browned.
