These puppies are light, refreshing, and most importantly EASY to make!

Don't ask me why I named this blog "Cooking with Kira" as if it is something that happens regularly. I don't pride myself on my culinary skills. I am fortunate enough to be marrying someone who loves to cook and is really great at it. When we lived together, cooking was a team effort where he was the captain and I was his first mate.  He would ask me to chop things or stir things but it was really him steering the ship. Without him, I was lost at sea.

Well for the past few months I got a one bedroom apartment close to the radio station so I wouldn't have to commute every day from Boston. This has presented a number of challenges in my life and shown me what a helpless adult I truly am. That was, however, until tonight.

I whipped up these shrimp and mango stuffed avocados and it was quick, easy and I didn't even chop my finger off. It was inspired by this recipe, but I dumbed it down a bit. ;)

Ok enough chit chat let's get down to business. Here are the ingredients needed to create this magical dish:

  • 1 large clove of garlic
  • 1 pound of raw shrimp (peeled & tails removed)
  • 4 hass avocados
  • 3 champagne mangos (cubed)
  • 1 lime
  • salt and peHass to taste
  • 1 tablespoon of olive oil

I opted out of the jalapeno aioli mentioned in the recipe because I am not a fan of mayo. I whipped up this simple siracha aioli with greek yogurt, fresh lime juice, siracha and some salt and pepper to taste.

In a large skillet you cook the olive oil and garlic for about a minute or until fragrant. (haha! that's what they say on cooking shows) and then add the shrimp. Cook the shrimp for about 3 minutes on each side and add salt and pepper to taste.

Add cooked shrimp and garlic in a bowl with cubed mango, stir and add fresh lime juice. Cut the avocados in half and remove the pits. You might need to remove some of the avocado flesh. Scoop the mango shrimp mixture into each avocado half. Top with sauce and garnish with a lime.

And voila! There you have a culinary masterpiece that looks real fancy but it really took you 15 minutes. (But no one needs to know that!)
