Who knew that there was a national oyster shucking competition and even more than that, there is a local man competing in it next week? 

WMUR - TV 9 reports that Christopher Buxton, who works at The Surf Restaurant in Portsmouth, will be headed to Maryland soon to participate in the competition. In just a few seconds he can shuck an oyster and does hundreds at a time.

And there may be more oysters available to shuck in the future. Just yesterday, Seacoast Online reported that the University of New Hampshire is part of a program that is attempting to restore the local oyster population after years of over harvesting and other issues. With any luck, they will succeed in returning to the days of "monster" oysters coming from our waters.
